Every great story begins somewhere.
For Giancarlo Scalzotto, it began in the warm kitchen of his mother, Emilia Megiolaro, in Northern Italy.
Emilia was not a celebrity chef, but in the eyes of her family she was extraordinary. Her kitchen was the heart of the home, where fresh pasta was rolled by hand, sauces simmered slowly for hours, and every meal brought the family together. Cooking for her was not simply about food—it was about love, tradition, and sharing something meaningful with the people you care about. As a young boy, Giancarlo would stand beside her, watching closely and learning everything she did: how to respect ingredients, how to prepare pasta from scratch, and how patience and passion could transform simple ingredients into unforgettable meals. As Emilia grew older, she knew that the recipes she had protected for a lifetime should not be lost. Before leaving this world, she entrusted those recipes to her son. One by one, she passed down the dishes that defined their family—the authentic flavors of Northern Italy.
Those recipes became more than instructions.
They became a legacy.
A Passion Becomes a Profession
Carrying his mother's recipes and her memory in his heart, Giancarlo began his culinary journey at a very young age. But passion alone was not enough—he wanted to perfect his craft.
Giancarlo pursued formal culinary studies, attending professional culinary programs and continuing to expand his knowledge through specialized cooking courses. Over the years he had the opportunity to work and collaborate with some of the best chefs in the regions where he lived, both in Italy and later in the United States.
These experiences allowed him to refine his technique, deepen his understanding of Italian cuisine, and blend tradition with creativity. Through hard work and dedication, he developed a philosophy that still guides him today: respect tradition while continuing to evolve.
Bringing Northern Italy to America
Eventually, Giancarlo brought his dream across the ocean to the United States, where he founded Scalzotto Italian Restaurant.
His vision was simple but powerful: to recreate the warmth of his mother's kitchen while offering authentic Italian cuisine to the American community.
The dishes served today are deeply inspired by Emilia's original recipes, rooted in the traditions of Northern Italy. At the same time, Giancarlo continuously works to improve and innovate, carefully selecting ingredients and techniques that allow him to present fresh, high-quality, and evolving dishes every day.
